Italian stuffed peppers
• Bell peppers, 2-3
• Vegan meat (Vegansk färs @halsanskok)
• Cooked rice
• Canned diced tomatoes
• Red pepper flakes
• Salt, pepper
Mix vegan meat with herbs, spices and cook until browned and cooked through. Pour in diced tomatoes and let simmer for 1 min.
Remove the mix from the hit and add cooked rice and part of the cheese.
Cut peppers on half and fill each half with the mixture, and top with more cheese.
Tip👨🏼🍳: Add just enough water to the baking dish so it covers the bottom. This helps the peppers become tender.
Bake the peppers for 30-35 min at 200C. Sprinkle on fresh basil. Ta-da!
